KOREAN SPICY COLD MIXED-NOODLES RECIPE: KOREAN BIBIM-GUKSU (비빔국수)

INGREDIENTS (FOR TWO)
  • Thin Noodles (So-Myeon, 소면)
  • 1/4 Cucumber, sliced thinly 
  • 1/4 Cabbage or Lettuce (simply any veggie you want to have with) sliced thinly
  • Gim (Korean salted seaweed), sliced thinly
  • 1 Egg, boiled and sliced in half
  • Sesame seeds
  • Kimchi, cut into small pieces
Sauce:
  • 2 Tbsp Hot pepper paste
  • 1 Tbsp Hot pepper powder
  • 2 Tbsp Corn syrup
  • 1 Tbsp Sugar
  • 1 Tbsp  Sesame seed oil
  • 1/2 Tbsp Soy sauce
  • 2 Tbsp Vinegar
DIRECTIONS
  1. Bring a large pot of water to a boil, add thin noodles with a pinch of salt.
  2. Add a cup of cold water when the water is boiling over - enhances the noodles' chewiness.
  3. Boil for 4 mins (average)
  4. While noodles being cooked, prepare the sauce. In a large bowl, mix all the ingredients under sauce section)
  5. Once noodles cooked, drain and rinse in cold water right away to prevent them get loosened and soggy.
  6. Mix noodles with the prepared sauce.
  7. Add garnish on top (cucumber, seaweed strips, eggs, cabbage, lettuce, sesame seeds or anything you want to eat with)
